MANUKA HONEY & OAT BREAD
You will need scales and a mixer with a dough hook for this recipe, but the end result will be well worth it!
INGREDIENTS
60g oats
560gm high grade flour
7gm sachet instant yeast
7gm salt
1 tbsp WildCape UMF™ Manuka Honey
330gm water
100gm milk
METHOD
Put all the ingredients into your mixer with the dough hook attachment and knead for 9 minutes. Leave the dough in the mixer bowl covered with a damp tea towel and proof for 20 mins. Turn onto a work surface and gently roll and tuck the edges into a log shape to fit a loaf tin. Place seam side down into the loaf tin. Heat oven to 220 degrees then rest the loaf for 20 mins. Gently slide the loaf into the oven and splash a cup of water on the base of your oven to create steam.
Close door and turn oven down to 190. Cook for 35 minutes. Turn the loaf out of the tin immediately onto a rack and let cool. Slice and eat with lashings of butter and WildCape UMF™ Manuka Honey.
